Josh Fairbanks Bread

Josh Fairbanks makes country loaves and a rotating baker’s choice loaf in Portland, Ore. After working at Tartine Bakery in San Francisco he decided to move to Portland where he makes about 30-40 loaves a week to individual bread subscribers. Josh bakes bold, naturally leavened bread loafs using grains mostly grown and milled in the Pacific Northwest. Josh uses seeds, cooked grain porridges, nuts, scalded flour, whatever he is particularly passionate about in that moment. Josh is a good friend of mine and the most humble and kind human being. I wanted to highlight him in this video, how he is emotional and passionate in how he approaches bread making and puts care into every loaf.

Founded in 2003, Schoolhouse is a lighting and lifestyle goods company dedicated to the preservation of American manufacturing, thoughtful living, and purposeful design. Many of Schoolhouse’s products are designed, assembled, and shipped within the walls of their Portland factory.
